VINIFICATION: Controlled temperature fermentation in stainless steel tanks, followed by secondary fermentation in the bottle, aged for at least 20 months on fine lees and manual disgorgement. The bottles rest for at least 6 months before commercial release.
ALCOHOL CONTENT: 12,50%
COLOUR: Straw yellow with golden reflections, with a very fine and delicate perlage.
BOUQUET: Fragrant, complex, with notes of bread crust, yeast, and hazelnut.
PALATE: Intense and persistent, with acidity well balanced by the structure of the Pecorino, pleasantly savory.
FOOD PAIRINGS: Excellent with roasted fish and white meats, pairs superbly with raw seafood and shellfish. Also ideal as an aperitif.
